It was a really nice day today and I spent the morning doing errands in town. But when the afternoon came around, there wasn’t anything else that I wish I was doing other than being outside. But I had a bunch of paperwork that I had to get done, so I tried my best to stay in. But you know how it goes – I kept finding excuses of things that I should really get done quick outside and then all of a sudden… I’d be outside again. But I did get the paperwork that I wanted to finish done and I even got out for awhile to mow tonight. I decided that with the reunion coming up in a couple of weeks – tomorrow is the day that I start with my lists again. I’m not too worried because it’s going to be pretty informal. I’m thinking it’s also going to be a lot of fun! Right now we’re waiting to see who can make it, and then if they can make it – when will they be coming. I’m glad that Kyle will be coming home for it, and William will also be home. William and Kyle will both be leaving within a couple of days after it’s over, so we’ll have to have all their stuff ready to go. I really think the house will be pretty quiet that week don’t you? Kyle will be heading back to Canada and William will be going to Europe. hummmm… I think I better get ready for that! But going back to my lists, they sure work good for me and I don’t know about you, but I don’t know how you get some of the things done if it’s not in front of you all the time.
I also boiled eggs tonight. Daryl asked why in earth that I was boiling so many, and I guess my answer would be.. because I can. But the chickens are starting to slow down a little bit, and I’m going to start to make some breakfast bakes and put them in the freezer for the reunion breakfast. (better put it on one of my lists!) We are planning on having a special mass for Daryl’s Mom, Dad, and brother on Sunday and then after church they should be done and ready for everyone to eat. I will be able to use up the eggs that we’ve been getting lately, so that’s good. But I think he’s right. I did really boil quite a few of them. But I was having such good luck that I was pretty proud of myself. To start with I had to check out on the web to see just exactly how to boil them the right way, and at the end I think they were right. None of them broke and I haven’t seen any of them with the yolks starting to turn green. What I did was to turn the heat to high and when it’s boiling really good, take them off the burner and cover the pan. Let them sit in the hot water for 20 minutes and then put them in ice water to cool them down. Yup, pretty good luck this time.
I also worked on a birthday card for my niece. Her birthday was a couple of days ago, but since she helps me scrapbook sometimes, I thought it better be something that she likes. It might be a little bit ‘too much’ though. The reason that I say that was because when Daryl looked at it all it could say was “Holy Cow, you’re going to need a bigger envelope”. Oh well, I like it and that’s what counts. I was glad to make something other than a graduation card for once.
