Getting closer to getting done

The electrician came again this morning and is very close to having all his work done. I’m glad that he started the work when he did, because the weather is so nice these past couple of days, I know that he’ll be in the field probably by the end of the week. He thought he’d have it all our work done by noon tomorrow. Yea!

I worked today on getting some paperwork that I’ve been putting off for some time now. Needless to say it was long overdue, but it was some stuff that you really needed to be in the mood for. Since I was working on paperwork today, I also ordered some more photo sleeves to put the rest of William’s pictures in them. I also was able to transfer all the files from the old computer to this one,  and now I’m trying to only use the new one. There isn’t too many different programs between the two – but there is a couple that I have to get used to.

William was hungry for this one pumpkin roll recipe that I make, and I thought since I had the oven on I would try a new pork roast recipe. We’re not usually pork eaters, but I wanted to try to make some shredded pork. The recipe is kind of a weird one though. You take the pork roast, put some chipotle peppers on the top, add some onions, then dump in some Diet Coke with a little brown sugar. I put it in an old dutch oven that I had and in the oven it went for the afternoon.It turned out pretty moist and tender. If you shred it and like it spicy, the gravy is good on top of it on a sandwich. But if you don’t like anything spicy, I’d recommend that you don’t add the gravy to the sandwich and just put some ketchup on it instead. I’m still experimenting with different food for William’s graduation party and the verdict is still out as of tonight.

I also made a batch of caramel. I must not have made any for awhile, because it sure tasted good today. I had some apples that I wanted to see how this caramel would taste on them, but if you look at the picture below – my caramel doesn’t work very well on apples. I tried to keep spooning it on top of the apple, but then I just gave up. We plan on just cutting this apple up, putting some caramel on the piece, and then eating it like that.
